First...<br />

Yes I'm still here. Although I did cut back on taking small orders last fall, I still have my license with the Fargo Health Department and have continued to bake for weddings from the commercial kitchen this summer as promised. It has been a joy to be more focused on the weddings I am committed to, I think my work shows it, and I plan to continue doing summer weddings. No changes there.<br />

In addition to that...<br />

The lovely state of Minnesota passed a new Cottage Food Law that went into effect July 1st that enables individuals (NOT businesses like Libby's Cupcakes Etc. LLC) to prepare and sell non-potentially hazardous foods (cakes and cupcakes) from home with some restrictions. I am in the process of registering with the state to be able to do so. As an<strong> <em>individual</em></strong> I am happy to announce that I will begin taking small orders again.<br />
<br />
But first...<br />
<br />
We are moving!!! Not far away, just to a different house that is currently under construction. It will have a beautifully big (medium-ish) kitchen and a larger-than-my-master-closet pantry in which to store and create more fun foodie things! Woo hoo! However, the taking of small orders <em>from home</em> will not begin until we have unpacked ourselves from the boxes I will surely get lost in in our new home. I will not be taking orders of any kind (through Libby's Cupcakes Etc. or personally) the entire month of August. <br />
<br />
Finally...<br />
<br />
With the help of my wonderful brother to whom I owe a nice steak dinner and a whole carrot cake, we have created a <strong><em>new website</em></strong> as a platform for showcasing the work I will do<strong> <em>from home</em></strong>. It will not only focus on cakes and cupcakes, but will incorporate my love for design (#libbybuilds), other food that comes out of my kitchen (#libbybakes), and other home life interests. The biggest difference from this blog will be the section of more personal thoughts on life in general (#libbyblogs). I'm very excited to expand the ways in which I share stories with you. Libby's Cupcakes Etc. blog and facebook page will stay up and running. There is a new<a href="https://www.facebook.com/beingLIBBY?ref=hl" target="_blank"> facebook</a> page for the new blog and instagram will be transitioning to the new name. You can always search #libbyscupcakesetc for pictures of wedding cakes if you're interested.<br />

<br />
At first I thought, "I have no idea how cupcakes or my blog relates to a real estate company in The Big Apple." But I was more than happy to oblige. Because.<br />
<br />
I. LOVE. CHRISTMAS!!!<br />
<br />
I love Christmas music. I love decorating for Christmas. I love the lights and the shopping and the gift giving, the charity and joy, food and family... I mean what's not to love about Christmas?!?<br />
<br />
Now I realize something I love even more about this time of year. Whether we live in a swanky SOHO loft or a 1957 rambler in the Upper Midwest, whether we celebrate Christmas, or Hanukka, or Kwanza, or just being alive; most of us take time to decorate our homes and share them with others this time of year. We find common ground that connects us to others despite our differences or geography, and we expand our community for the purpose of celebrating the GOOD in the world. <br />
<br />
We could all use a little more celebration of good in the world, right?<br />
<br />

While working on this project I became more aware of how most of the cherished treasures in our home are handmade or were gifts. I think that's true for many in this part of the country and speaks to what's important in our community/neighborhood. These trees I made with some friends last year at a holiday craft-o-rama. The wooden nativity scene was made by my father-in-law as were many of the wooden trees and décor you'll see throughout. The large barn wood and corrugated metal board that I'm using to hang Christmas cards on this year was an anniversary gift from my husband and made by a friend of his. This year, I made these simple stockings because my son wanted one with his initial on it. I don't expect them to last forever. ;)</div>

I'll admit, I don't like the fake candles on our table. I had some pretty red ones that smell like cinnamon. But we opened this big set of fake candles last Christmas at a family gift exchange and one of my boys was SO excited! When we were decorating after Thanksgiving he remembered them, specifically went searching for them, and put every last one out when he found them. So. He wins. Pretty cinnamon votives are stashed away for another year.</div>

Every year I let the kids pick out an ornament for the tree. Last year my oldest picked this one because it reminded him of a chipmunk (he named "Chippy") that visited us outside the resort we stayed at while on vacation the summer before. I love that he chose something that connected him with a memory from family time.</div>

I didn't expect to have so much figured out so quickly, but this "break" has been pretty productive!<br />

First, I accepted a part time position with my boys' school district which I am SUPER excited about. This schedule keeps me busy when kids are at school while still allowing me to be available for them when they are not. With this new addition to our life, I have decided to hold off on accepting new clients/orders during the school year. <br />
<br />
The good news is - I HAVE SUMMERS OFF!! Which means I will continue to be available for weddings and larger orders <strong>June, July, and August</strong>. At this point, Libby's Cupcakes Etc. will be primarily a<em> Custom Wedding Cake/Cupcake</em> provider without an emphasis on birthdays, graduations, baby showers, etc. This is a little sad for me because one of the things I enjoy is coordinating cupcakes with your themed parties. But, as I said before, there are many friends and my own family that I will continue to bake for year round, so don't be surprised to see some of that on my Facebook page/Instagram feed. I have to admit though, it IS kind of nice having "free time" again. <br />
<br />
Finally, although I won't be opening orders up to the public, there is an opportunity for you to continue to enjoy Libby's Cupcakes Etc. Starting mid-December I will be doing occasional baking for<strong> </strong><a href="https://stumbeanos.squarespace.com/" target="_blank"><strong>Stumbeano's</strong></a> Coffee Roasters downtown Fargo location (201 Broadway, lower level of the Loretta Building, sharing the patio with The Boiler Room). If you haven't tried their coffee yet, GET THERE! There is not another place like it in town. They are having a holiday event the evening of <strong>December 11th</strong> with special cupcakes from yours truly while supplies last. I hope to continue to supply cupcakes there about once a month. I will update Facebook when they're available.<br />

It's been a loooong time since I last blogged. In case you don't follow me on Facebook or Instagram, let me get you up to date. This spring I baked a lot. Then there was summer filled with weddings near and far. While I thought I'd planned well to leave open dates for family time in the summer, I neglected to do so for the fall which led to lots more baking! This year has been AH-mazing! So what's up with the "Taking a Break" title?? <br />

I'm glad you asked and I'll try to keep this short as there are so many factors that have played into this decision process. <br />
<br />
Most of my working hours are Wed-Sun with a heavy emphasis on evenings and weekends. With a husband and two growing (quickly!) kids on a Mon-Friday 8-3/5 schedule, plus other activities, that means plenty of precious time away from them, missing out on the fun stuff in life to tend to the sweet-toothed needs of others.<br />
<br />
I've spent much of this year thinking about how to balance both work and family time/play. What's the best next step for my business? How can I be more efficient? Make the most of my time and resources? Should I hire someone? Get a permanent space? How do I continue to run a successful cupcake business and not eventually come to hate cupcakes and wonder who these people are living in my house?! <br />

With the recent and unexpected loss of a family member, finally tackling these questions with action has become a priority for me. As much as I enjoy the creative outlet and social aspect this business has provided me, it is time to reconsider if the sacrifices necessary to continue doing so are worth it.<br />

What does that mean to my clients? After this weekend's wedding and orders, I will close shop until the New Year. <strong><em> No more orders for 2014. </em></strong>I do plan renew my license for 2015. And I still haven't made up my mind. Outside of making a few hundred for the cocktail hour at the wedding of some friends of ours, I only make them for our little family during the holidays.<br />

The cons? They. Are. So. Much. Work. It is usually a two to three day process for me to make the dough, let it set, roll out, cut and bake, then frost and decorate. Not to mention they are a little more fragile in transporting and difficult to store than the cupcakes I'm used to.<br />
<br />
The pros. They are so darn cute when they're all done up! And sooo yummy. I kind of get in a trance when I'm decorating them. They are a whole different beast than cupcakes. There are rarely two that are just alike and that part appeals to my whimsical side. <br />
<br />

That's a lot of love for one weekend! The 6" cake is for the oldest birthday girl. It's strawberry filled with lemon cream cheese and decorated in an ombre vanilla butter cream ruffle. Whew! The mini cake is for little sister who is turning 1. It is comprised of 2" layers of vanilla bean cake decorated with butter cream to match big sister's. Grandma got a special gluten free petal flower cupcake for the party. More GF white almond rose cupcakes (not pictured, silly me) were reserved for the baptism on Sunday. <br />

Directions for butter cream ruffle cake:<br />
<br />
Frost the entire cake in a thin layer of butter cream with smooth sides and top and let set. Fill a pastry bag with the darkest color frosting and a petal tip or Wilton tip #104. Start at the bottom with the fat part of the tip against the cake and spin the turntable as you pipe on the frosting. Work your way up in a continuous spiral, refilling the pastry bag with lighter frosting as you wish. Pipe on layers of ruffles all the way to the top edge. On the top surface, start at the outer circumference with the thin part of the tip facing out. Again, spin the turntable and work in a continuous spiral motion until you get to the center. Our not-so-little-anymore boys started playing hockey this year (despite my thoughts on the matter) and as it goes, our life has become one big hockey tourney. Including this birthday party. As one parent said to me recently "Well, you're in now!" Yup. But at least I can still make awesome hockey cupcakes while I'm at it.<br />

You know, I'm not very girly. Sensitive, yes, and sometimes(?) emotional, but not girly in the traditional sense. Being surrounded by boys whose entire life revolves around sports and tooting on each other, there's no wonder my girlishness is lacking. Maybe that's what initially attracted me to making cupcakes. It allows me to nourish the part of me that needs a bit of ruffles and lace and pink.<br />

One of my dearest friends had a baby girl recently (Yay! A baby girl I can hold and promptly return at first whimper!) and today was her baptism. What a beautiful ceremony it was, an adorable chunk of baby cuteness surrounded by family and friends who love and support her. Afterward my friend hosted a brunch for the family and below are the cupcakes I brought along - pink and girly in all their glory. These little cuties were for a farm themed birthday party. I so badly wanted to do a little red barn and green tractor with the animals, but I follow orders. ;)<br />

Occasionally I like to go out of town for the weekend. Really! Did you know that I can make fondant toppers like the above that you can place on your own home-made (or, heaven forbid, store-bought... ;) ) cupcakes? Here it is! A Dr. Seuss themed cake. The bottom tier is 8", then 6", and the hat on top is made up of three stacked cupcakes. And lots of frosting! Each is frosted with vanilla-almond butter cream with hand cut fondant decorations and edible ink marker. The wedding and events prior took place at a place called Sugar Hollow Retreat near the Watauga River in...well, I'm not really sure what "town" it was in. It was pretty remote. When we finally arrived (never trust a GPS) we pulled into The Lodge, above, where we stayed and where the reception took place. There were several other cottages and a conference center along the mountainside of SHR. And if it weren't for all the rain, we might have even had a chance to hike one of their trails. There was plenty of nature to take in at SHR. As soon as we pulled in two fawns and two does walked right past us. We saw several wild turkeys, and their babies, and although no bears were spotted, trash was not allowed outside. Ever. It was the perfect rustic backdrop to a simple and beautiful wedding! <br />

I was so excited for her big day; to see her so happy and shining and walking down the aisle to her prince. Her beautiful wedding also meant my hubby and I got a weekend away in the mountains in TN. Here is the final set up. The colors for the wedding were brown and wasabi green, and there was a theme of "M+B" in hearts along with daisies, butterflies, and other natural elements. The cake is Vanilla Bean with Vanilla Buttercream, simply decorated with meander piping, a fondant round with "M+B" stamped on, and a fondant butterfly floating above. It sat on top of a slice of tree. How perfect for a mountain wedding.</div>

This beautiful reception was held at the newly remodeled Radisson hotel in downtown Fargo. Many of the displays, including the cake table, were rented from the fabulous Carrie over at <a href="http://www.rustictrunk.com/index2.php#!/HOME" target="_blank">Rustic Trunk</a>. The mix of modern and rustic made the overall vibe relaxed and elegant. But I have to say, my favorite part of the whole thing was the cake... <br />

Lots of natural light, white, and wood made for an easy backdrop to the pops of yellow and watermelon pink. Accented with burlap and mason jars and I was in LOVE with this set up! It was also nice to get out of the "city" for the afternoon. <br />

As my luck would have it, one was for a baby boy and the other for a baby girl. That meant I had to do two batches of differently colored butter cream frosting AND that after the cakes were filled and ice coated, but before they were decorated, on the exterior they looked EXACTLY the same! Ahhh! I had to be VERY careful not to mix them up. Oh the pressure! <br />

Her older two stayed and played at our house. I specifically remember having asparagus which none of the kids liked. And I think we might have even watched The Lorax. I remember getting the call that baby had arrived and sharing the picture text with two sleepy siblings. It's so much fun to remember those little details of the day a child was born, even if this one's not my own. And it's why I LOVE celebrating birthdays. Sometimes it's okay to go overboard. LIFE should be celebrated!!!<br />

2013 is no doubt the year of the baby! I know 10 people personally that are having babies in 2013, not including all the baby showers and gender reveals for work recently. So far, I've been seeing a lot of pink! (And I like it. :)) This weekend's baby shower was no exception. Flavors included White Almond and Chocolate, both with Vanilla-Almond butter cream, and Pink Velvet with cream cheese frosting. <br />
