The Passion:
In May of 2009, with a toddler and new baby at home, I was in dire need of some "me time." Thanks to a little sisterly competition, I signed up for a cake decorating class at a local craft store. What started as an excuse to leave my motherly duties behind once a week, quickly turned into a passion for cake decorating as well as experimenting in the big wide world of baking. It has been a wild ride from the first time a friend asked me to bake for her sister's bridal shower to now. Baking out of my home kitchen in my spare time for the past three years has been a joy and an honor. It has also been very messy and sometimes stressful. As my passion turned business continued to grow, so too did need for more space and better marketing. In January of 2013 I became a licensed baker in the city of Fargo working out of a rental kitchen called Square One. I am excited for the future of Libby's Cupcakes Etc. and can't wait to share more of this crazy ride with you here in the blog-o-sphere.
The Pastries:
While I like to focus mostly on cupcakes, I make all genres of buttered-sugared goodness, from stacked cakes to shaped cookies to those irresistable minis. I bake for weddings, baby showers, birthdays, house parties, bridal showers, baptisms, ETC. Orders are all custom made to your specifics. My baking philosophy is inspired by all the places I've lived. From my southern roots, indulgence...and the use of butter, for which there is no substitute! (There is also this fantastical thing called The Pig Pickin Cake. It might be your favorite if you're ever willing to give it a try.) From my time in California and the DC metro area, making it pretty. Who knew a degree in interior design would lead to beautiful fondant cupcake toppers? And from my current home in the Midwest, the do-it-yourself attitude, which in baking just means make-it-yourself. Or in this case, myself. I am a big believer in real food! Yes. Even when it comes to dessert. I want to know what I'm eating which is why everything is made from scratch with fresh ingredients. And local too if I can swing it.
